With this article, I return to the section of recipes with coffee, and today I bring you one that I tried a few months ago when I made a trip to Southeast Asia and was in Vietnam. This country is incredible, with a millenary history that captivated me, both for its culture and people. In addition, they have a great coffee tradition, and on every street, you can see a coffee shop or a coffee cart.
Walking the streets and cafes of Hanoi (the capital of Vietnam), I found this drink that caught my attention; I tried it and thought it was amazing. So today I’m going to show you how to make it.
It is called cà phê trứng or Egg Coffee and is very popular in Hanoi. I was specifically at Café Giảng, the coffee shop of the one who invented this preparation in 1946 during the war with France. At that time, milk was scarce, and they looked for an alternative to replace it.
The vietnamese egg coffee recipe
If you use a good quality coffee for this recipe, you can drink it hot or cold. And beyond the fact that it is a sweet drink, the coffee flavor predominates and produces an incredible texture.
In Vietnam, they prepare coffee with a Vietnamese aluminum filter and use their robusta beans. It is a pretty intense and bitter coffee, so they use a lot of condensed milk, sugar, or honey to counteract it.
I will give a little twist to this recipe, and we will use good-quality coffee beans and a Moka pot. This change will give us a pronounced intensity and body, which will go very well with the egg cream.

Ingredients for vietnamese egg coffee
We will need two fresh egg yolks and two tablespoons of condensed milk to prepare an Egg Coffee.
Step by step for the preparation of the egg coffee
- Place these two ingredients in a bowl and, with a mixer, beat for about five minutes. First, it starts with a strong yellow color and becomes lighter and lighter as it grows, beating until it has a meringue-like texture.
- In another small bowl, we will add hot water and place the cup you will use inside the bowl (photos below).
- Serve the coffee in the cup inside the bowl with hot water.
- Place the cream on top. In Vietnam, they serve coffee this way to keep the drink warm.
- You can now appreciate and enjoy a delicious Vietnamese egg coffee.
You can also drink it cold by adding a few ice cubes, which is ideal for the summer. So try it, you won’t regret it.
I highly recommend this recipe. It may sound a little weird to put eggs in coffee, but it is a unique experience in texture and flavor; it is delicious.
